Had tickets to the 9:30 PM Le Reve show. I booked dinner at Corsa Cucina for 7:00 PM several weeks prior, thinking I would have plenty of time to eat and easily get to the show on time. After all, Corsa Cucina is about 1 minute away from the show. At 8:35 I asked the Mgr. if our meals would be coming soon. She looked in to it and had our meals on the table by 8:45 with an apology. I had the Veal Parm. It was awful. At 9:05 the waiter asked if we would like desert. My reply was "my dinner took so long, do you think I have time for dessert'?
The guy at the table next to us was so mad with his service that i truly thought a fight was going to break out. I'm serious.
Look, the truth is this place is quite expensive. The cheapest entre was $29.00. If you want a filet it will run you in the $40.+ range. I don't mind paying this much, but the food and service had better be good. And I got neither here.
With so many great restaurants in Vegas, look elsewhere. Don't go here and be dissapointed and angry like my group. You will not feel special here.

The Best Dining Experience I've Ever Had!

First, I will say that I have been to this restaurant twice; once back in April of 2007 (for my birthday) and more recently on March 18, 2008 (for my girlfriend and her daughter’s birthday). My first experience was absolutely terrible. The service was bad and the food was forgettable. We heard that there were changes made in the restaurant and a new chef was in charge so we decided to try it again; I am glad we did!
Chef Alex Stratta has completely turned Corsa around. He has another restaurant in the Wynn hotel called Alex. It is a fine dining restaurant that has won numerous awards and needless to say, he is bringing his talent and experience to Corsa now.
I went to the restaurant early because I had a special request for my girlfriend and her daughter because it was their birthday. I spoke with a gentleman named Paul (manager I believe) who was fabulous. He was more than accommodating and even seemed excited for what I had planned. I bought them Tiffany bracelets and wanted them brought out after dinner as a surprise.
When we arrived at the restaurant, we were instantly taken to our table. Paul greeted us and gave us a rundown of some of his favorites on the menu while the server was at another table. He suggested that we get a pizzette for an appetizer, and it was amazing. Their oven makes for the best pizza crust I’ve ever had!
Next, we ordered drinks (try the Limonada – it’s to die for) and our meals. By the way, they serve Fiji water when you sit down, what a great touch. I ordered the Kurobuta pork chop, my girlfriend had the grilled rib eye steak, and her daughter had the ziti w/ Maine lobster. All three meals were great. The pork chop was a very generous size and was served with roasted squash, apples, and raisins. The sweet taste of the apples and raisins combined with the natural salty taste of the pork made for the most delicious meal I have ever had. My girlfriend’s rib eye was served with a garlic pesto topping that was amazing. And again, it was a generous portion; we took the leftovers and had a steak omelet in the morning! I’m not sure how the ziti was since her daughter was silently not sharing it…so it must have been good. We ordered the parmigiano potato gratin to share and again we were more than satisfied.
We left a little room for dessert and we all had something different. I had the white chocolate cheesecake. It was incredible. My girlfriend had some kind of baked sweet bread that she enjoyed and her daughter got their version of tiramisu (which use to be her favorite dessert until she tasted this!). To top it off, it was served with a candle.
We were all comfortably full now and we were offered some coffee. They serve Illy cappuccino - if you’ve never had it, you are sadly missing out. This was the cue for Paul to bring out the bracelets. He put them in a nice bowl with a lid on it and set them in front of the girls. It was so elegantly done that even I was surprised. This was hands-down the best dining experience that I have ever had. We are looking forward to going to Chef Stratta’s other restaurant, Alex, to experience his take on fine dining.
There have been many reviews on here that have been bad but I don’t think anyone will be disappointed if they go to Corsa now that Chef Alex Stratta has taken over. Any review before late 2007 should be considered for a different restaurant since Corsa has been drastically changed (speaking from experience). To anyone who is going to see a show at Wynn Las Vegas, this is a perfect pre/post show dinner since its right by the theaters.

Beautiful restaurant, decent service but not impressed at all. This place has gone through renovations and several chefs in its short life and probably suffering from an identity problem and possibly management turnover.
My wife has a thing for Carbonara sauce and I recently passed by and noticed this was on the menu. That same night I went online and this item was there as well so I made a reservation.
When we got there we were seated at a nice table and looking at the menu we noticed this dish was not on it. It was my wife's birthday and we actually wanted to try Okada the Japanese place at the same hotel and only went here for my wife. What a dissapointment. I made this known to the server and his unhappy response was that 80-90% of the menu had been recently changed. Is this really what you want to tell the customer? Obviously he was unhappy about the changes but we did not need to know this. By the way, Carbonara is a very simple sauce to make and he should have asked the kitchen if they could make it for us, specially since they had it on the menu so recently but that is a different story
Service was decent except for the Asian female food runner that walked around the restaurant like she owned the place and had no personality and dropped the food like she was doing you a favor and the overall evident lack of direction from management.
We ordered a small grilled flatbread pizza (pizzette) with meatballs that a friend recommended and it was the highlight of the dinner. This alone was worth the trip. The other app ($24) grilled shrimp with beans and white wine was not so great. While the shrimp were good, grilled shrimp are normally a little dry and we were hoping the beans underneath would be a good complement but they were cold and did not have any kind of liquid so the combo was not as pleasant as other versions we have had of this dish.
The 3 kinds of bread we got were ice cold and the pesto was nice but served in a two compartment dish. They should serve 2 different "dips" and warm bread.
Main course was a good shortrib (with a cold confit onion on top) and nothing else on the plate ($35). This is why they tried to sell me sides ($8) which I would have probably ordered if I knew my entree was so plain but then my wife had lobster with ziti ($38), not something that you would order sides for.
My shortrib was really greasy but good but did not like the cold onion contrast (see a theme here?)
My wife's pasta was served with a ton of breadcrumbs on top (why??) even though it was not baked at all. It looked like crap and was tasteless and was the worst and most expensive pasta I have ever ordered. We took it to go
We got a white chocolate cheesecake with strawberries on top (knowing berries are not in season by wife insisted) and it was so thick you could not eat it. Left over half but it was cheap ($8.50)
They did provide a nice candle for my wife's birthday and the manager came by several times to say hello which was nice. Service overall was decent but we went there to eat and the food for the most part was pretty subpar.
If I was ever to come back I would seat at the bar and have a pizzette with some nice wine or beer

Great steaks, and the pizza!!!

I'm a big fan of Corsa, their steaks are excellent. But first you've got to have their outstanding pizza! Super thin with tasty cheese and a rich sauce- just a perfect way to start. Their steaks are tender and delicious and go great with mashed potatoes and onions. I've also tried their some of their deserts which are fantastic. The only disappointment was their Chicken Parmegian during lunch- some flattened chichen with a not so favorful sauce; and I don't care for their not-so-fresh breads either. Better to wait for dinner to get a great steak. Service has always been good, prices are on the high side, but it's worth it.

After having read the other reviews of Corsa it seems this is a hit and miss place.
I have been here only once in October 2007 and I must say the food was excellent. I especially liked the bread, which comes in different varieties and is accompanied by some nice pesto. A really good Italian experience.

Like everything at the Wynn, it doesn't come cheap, but that has to be expected.
