We thought we'd give Spago a try as we always pass by the 'patio' diners everytime we go to Caesars. Besides with Wolfgang Puck as the celebrity chef behind Spago we thought it would be a great dining experience for a casual lunch. I wish we had not been sucked in. The tables are always filled but actually what one sees are the patio or outdoor tables. There is an empty dining room inside behind the bar area and I can see why that is so now.

First of all the waitstaff are clueless and not polished. Our waiter came off as brusque and not at all personable. Once we sat down he came over and asked 'What would you like to drink? Do you know what you want to eat?" This was all within less than 5 minutes of being seated. Can we have a bit more time to look at the menu? And where is the drinks menu or wine list? No, we are to know exactly what we want to drink from memory. It's good we didn't want a bottle of wine or what would have happened? Would we have offended him by asking for a wine list or were we to name off the top of our heads the make and vintage? This was great too: he practiced memorization of all of our orders. I guess that's what management teaches their waitstaff to do? And I suppose the management expects the patrons to follow suit as well unless this was our waiter's talent. His attitude belongs to a neighborhood bar and not to a supposedly upscale restaurant as Spago.

The busboys brought our ice water without lemons and straws although the other diners had. A couple of times they brought us orders which belonged to other diners. At the end of our meals one busboy asked if we needed bread(?). The worse thing that all waitstaff did was to snatch our plates before asking if we were finished. Oh, there was one instance where I was clearly done but our waiter asked if I was finished. However, the other two in our party had their plates taken while they were almost-but not quite-done. It did not seem to register to the waitstaff that they took their plates too soon!

The other disappointment was the food itself. One of us had jambalaya at $18 which was a very soupy rice with a few tidbits of prawns, fish, and sausage. The second person in our party ordered the pork chop which was actually just that: one thin pork chop with some oversalted squash. The pork chop was dry and looked like it was baked, but for $25 it was terrible-a ripoff. I had the chicken breast with mashed potato puree with mushroom marsala. The chicken breast was more like a pigeon breast as it was so tiny, the mashed potatoes tasted as though they came from a box, and while the green beans and baby carrots were cooked al dente, the whole meal was reminiscent of a TV dinner in some ways. Only thing this meal cost much more than a TV dinner at $17.

In short, the food at Spago is just average fare. And the waitstaff surely needs to be retrained as to the correct way of serving. For the high prices they charge and also for Wolfgang Puck's reputation, Spago Las Vegas definitely needs to improve its quality.

They had the best chicken salad ever. I was there two weeks ago and I'm still craving more. Service was okay, not very attentative. Price are a little high, portions are somewhat small, but worth it for the yummy food.

The good: Our waitress was knowledgable about the menu and even helped us choose a good wine. We had selected a pinot noir from New Zealand and she told us that the wine was "citrusy and barky", which meant that it tasted awful, at least to her. She recommended a petit syrah that was in our same price range. It was really good. I like that, when a waiter really knows his/her wines. The food was what I expect from Wolfgang Puck... delicious!

The bad: I agree with the previous poster that the ambience could be better. Also, I had to ask the busboy to give me clean utensils after we were done with the appetizers. While he was clearing our appetizer plates, he asked if we were expecting more food. I told him yes and he took our dirty utensils off our appetizer plates and put them back on the bare table. I had to ask him for clean utensils.
That was the only negative thing.

Stopped at Chinois' sushi bar for a light dinner before seeing Elton John at Caesar's. What we found was excruiatingly SLOW service, just OK food and no atmosphere.

The place is nondescript. Looks like it would be home at any mall's foodcourt.

Sushi chef was overwhelmed at 5:30pm with what looked like 4 or 5 orders of pretty basic rolls! Executive chef came out to help and manager stood impatiently beside us glaring at the sushi chef while waiting on his order.

We ordered a spicy tuna roll and a catapillar roll along with two glasses of wine and a cucumber salad from the waitress. Wine finally arrived after both rolls were presented and consumed! Salad was placed on opposite end of the nearly empty sushi bar and never delivered until it was noticed by the manager walking by. Sushi was average at best. Had to ask the manager for our check as our waitress was lost in space.

We were told by the sushi chef that's he's never seen Wolfgan Puck at the restaraunt. It shows.

For much better sushi in Las Vegas, go to TAO or Tsunami at the Venetian. Tsunami was excellent and TAO was outstanding.

I've eaten at several of the Wolfgang Puck restaurants in Las Vegas. However, my dining experience at Spago in the Caesar’s Forum was horrible. Let's start with the service. The waitress took 20 minutes to get us a cocktail. This is Las Vegas, shouldn't every server know to bring drinks quickly since most customers are in the mood to drink. The waitress then spills half my drink on someone at our table. The waitress then hands me the drink without apologizing for making his shirt smell like bourbon or for giving me half a drink. I never got a chance to order a second drink. Instead, I went to the hostess stand to order a glass of wine with dinner. I needed a bull horn to get anyone's attention. The food was bland and really salty. I recommend the cafe Puck has at the MGM and the Express's are always good for a quick bight. However, this Spago was absolutely awful. The sad thing is that Vegas has so much to offer in dining that it really hurts someone like Puck's reputation when he creates such a terrible dining experience.
